  • 2 1/2 cup rolled oats
  • 1 cup buckwheat groats
  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1/4 cup pepitas
  • 1/2 cup rice malt syrup
  • 1/2 cup coconut oil, melted
  • 1 tsp cinnamon
  • 1 egg white, whisked
  • 1 cup dried cranberries

Preheat oven to 180 degrees celsius. Mix all ingredients except cranberries in a large bowl. Then pour over a lined baking tray and spread evenly. Pop in the oven and bake for 30-45mins (depending on your oven), stirring mid-way through to avoid over-cooking. Once lightly browned and cooked remove from oven to cool. Once cooled, sprinkle cranberries over the granola, and then scoop it all into a large jar to store.

Best served with yoghurt and fruit for breakfast. Or with your milk of choice. Enjoy!
