Ingredients
  • 2 cups nuts (cashews, almonds and macadamia work well)
  • 1/2 cup coconut flakes
  • 2 Tbsp cacao powder
  • 1 heaped Tbsp honey
  • 1 heaped Tbsp coconut oil
  • pinch of salt
Method

Place all ingredients in a high speed blender or food processor, and process until creamy. You want the texture to resemble that of cookie dough. Then roll about 1 tsp of mixture into balls, and place on a plate. Repeat with remaining ingredients. Cover and refrigerate until ready to serve. These make great snacks so leave in the fridge and grab as you go. Or make double and freeze some! Enjoy.

Note: to avoid half the mixture ending up on your hands: slightly wet your hands with water before rolling each ball.

These incredibly healthy snacks will make you the envy of your office. To make appropriate to take for school snacks: feel free to swap nuts for a selection of seeds such as sunflower and pumpkin seeds.
