Golden Eggs with Greens

  • 2 eggs
  • 1 Tbsp olive oil
  • 1/4 tsp turmeric (or a good sprinkle)
  • 1/2 cup broccoli
  • 2 Tbsp peas
  • 1/4 avocado
  • Goats cheese to serve (optional)

Heat a small fry pan on high heat, and add the olive oil to the pan. Sprinkle over the turmeric, and then crack open the two eggs into the pan. Cover with a lid, and leave to cook until how you like them. If you like a runny yolk it won’t take long at all (maybe a minute or so), leave longer if you prefer your yolk hard. The yolk will have only just whitened over when it is cooked but still runny. Remove from the pan and place on a plate. Add the broccoli and peas to the pan and cover for 2-3mins, or until cooked through (they should be a vibrant green!). In the meantime, slice avocado and place on plate with eggs. Add broccoli and peas once cooked, and top with some goats cheese if desired. Salt and pepper to your taste preferences. This is such a great dish for your liver! Enjoy.

P.S Feel free to swap the greens for anything in season: such as kale, asparagus, broccolini, spinach, zucchini etc.
