· ½ cup rolled oats
· 1 Tbsp. cocoa powder
· ½ cup milk & ½ cup water
· 1 ripe banana
· 1 tsp. butter
· 1 tsp. maple syrup
· ¼ tsp. cinnamon
· 1 Tbsp. chia seeds, crushed nuts to serve (I used cashews) & a little extra milk
Heat a small pot over the stove with oats, cocoa powder, milk & water. Once it starts to boil (around 1-2 minutes), turn the heat down to low and leave to simmer for 3-4 minutes, stirring occasionally. Once the porridge is almost ready, grab a small pan and place on the stove.
Add butter to the pan and then place on medium heat. Once butter is melted, slice bananas in half lengthways and add to pan. Sprinkle over cinnamon and maple syrup and leave to sauté for 1-2 minutes, or until starting to cook through and caramelize. Flip the bananas over and allow to cook for a further 1-2 minutes.
Dish up porridge into a small bowl, and top with grilled bananas, chia seeds and nuts or seeds of choice. Add a dash of milk to serve. Enjoy!
