Ingredients
  • 1/3-1/2 cup rolled oats
  • 1 Tbsp chia seeds
  • 2 Tbsp mixed nuts and seeds (such as pumpkin seeds, almonds and cashews)
  • 2/3 cup milk of choice (dairy/soy/almond)
  • Yoghurt to serve (greek/ natural or coconut)
  • Fresh fruit to serve
Method

In a small bowl or jar add rolled oats, chia seeds, nuts and seeds and milk. Stir well to combine. Cover, and leave overnight in the fridge to soak.
In the morning, top with yoghurt and fresh fruit to serve.

Alterations: try adding zest of half an orange prior to soaking for a delicious citrus kick; OR a Tbsp cocoa powder for a chocolate start to the day that is actually healthy!
If energy requirements are high, a tsp of honey or maple syrup drizzled on top can be a delicious addition also.
