Ingredients
  • 1 mashed banana
  • 1 egg
  • 1/4 almond meal
  • 1/2 tsp baking powder
Method

Combine all ingredients in a mixing bowl and stir or whisk to make batter.

Heat a small non-stick pan on medium to high heat. Add a small dob of butter or coconut oil to the pan, and once melted add two small scoops of batter to the pan. Ideally you want the pancakes about 3-4cm wide with a little space between them to cook. Leave for 1-2mins or until bubbles start to form on the pancakes. Flip them with a spatula to cook the other side. Leave for a further 1-2mins or until cooked through and lightly browned. Remove from pan, and place on a plate. Repeat with remaining batter. Once all cooked, serve with some greek or coconut yoghurt (unsweetened), warm berries, cinnamon and a drizzle of maple syrup if desired. Enjoy!
